These wholesome bars are the perfect on the go breakfast or snack. They are packed with protein and good fats so will keep you going for longer.
1 cup pumpkin seeds
1 cup almonds
1 cup rolled oats
2 tbs pea protein
1/2 cup coconut oil
1/2 cup desicated coconut
1/4 cup rice malt syrup
1/3 cup almond butter
2 tbs Organic Natvia
2 tsp cinnamon
1/3 cup dried cranberries
1. Preheat oven to 160 degrees. Line a 20cm square tin with baking paper.
2. Place pumpkin seeds, almonds, oats, protein powder, oil, rice malt syrup, eggs, almond butter, Natvia and cinnamon in a food processor and mix until just combined.
3. Stir in berries and press firmly into the tray.
4. Bake for 30min or until golden brown. Cool in pan and cut into bars.
These will last 7 days in the fridge but last even longer if you freeze them in bars.
